Greek Roasted Eggplant Dip (Melitzanosalata)
The super easy authentic traditional Greek recipe that everyone can prepare in minutes!
- 1 jar of Nestos Roasted Eggplant Puree
- 1 Nestos Roasted Red Pepper cut in pieces
- 1 clove of Garlic
- 30ml vinegar
- 60ml Olive Oil
- 2 spring onions
- Chopped Parsley
Place in a bowl the Roasted Eggplant Puree and the Roasted Peppers. In a food processor, add the garlic, vinegar, olive oil and beat well. Add the mixture into the bowl, season with salt & pepper and sprinkle the spring onions and parsley on top. Stir until all the ingredients are completely combined.
